Cranberry salsa is my fave

By request, here is the recipe for cranberry salsa. I had a hard time deciding to share this or not since it would be my saving grace if I were on Iron Chef and the secret ingredient were cranberries. Although it’s not really a good time to share since fresh cranberries are impossible to find. Sorry Charlie.

2 cans stewed tomatoes
1 can jellied cranberries
2 stalks celery
1 red onion (I usually substitute a smaller amount of a milder onion)
1 carrot
1 Tbsp. cilantro
1 Anaheim pepper (long, skinny, yellow)
1 c. fresh cranberries
1 jalapeno pepper, minus seeds
Salt and pepper to taste
2 -3 Tbsp. sugar
2-3 Tbsp. red vinegar

In a processor, mix just enough to blend together the tomatoes and jellied cranberries. Chop fine in food processor the celery, onion, carrot, cilantro, peppers and fresh cranberries. After blending, mix in tomatoes and jellied cranberry mixture. Add salt and pepper, sugar and vinegar. Serve with chips or just eat it with a spoon.
