I’ve tried the famed Jacques Torres recipe and while it was DELICIOUS, I didn’t like that I had to bunch of flours and let it sit for 36+ hours (I mean, really, who can wait that long for cookies!?).. I’m a big fan of the Baked recipe from the Baked:New Frontiers cookbook. It has more brown sugar which I like! One thing from the Jacques recipe to keep: the sea salt on top! Can you tell my boyfriend requests chocolate chip cookies weekly and I have a lot of experience!? =)

Make sure when you take them out of the oven they are still doughy and let them cool on the cookie sheet for at least 10 minutes. Nine minutes in the oven is usually perfect.

Your idea sounds like a lot of fun, I just don’t think you and your friends will ever settle on a perfect chocolate chip cookie. -

2 sticks butter
1 cup sugar
1 cup brown sugar
Mix together until blended.2 eggs
1 tsp vanilla
Mix together until blended.1 3/4 cup flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
Mix together until blended.2 1/2 cups blended oats (i think this is the key!)
Mix together.1 bag Ghirardelli Chocolate Chips
Bake at 375* for 8-9 min. Enjoy!!!

The key is to cream the butter and sugar until it looks light and fluffy like a meriunge. Five minutes at almost full speed in the stand mixer does it. And cut the flour just a bit. Then you have to make them huge, because bigger is better when it comes to cookies.

That being said, IMHO the Jacques Torres recipe is the one I have crowned ccc king in my heart. At first I thought the 36 hour chilling requirement had to be a gimmick, but I tested the dough myself over various hours and the time really does make a huge difference. Whatever our personal preferences may be, Viva la chocolate chip cookie!!
